Grilléd Pineapple Chickén Recipe

- 8 0z pineapple rings can juice drained and reserved
- 1/4 c. brown sugar
- 1/4 c. low sodium soy sauce
- 1/4 c. Teaspoon garlic powder
- 1/2 c. Powdered ginger
- 1/8 c. Ground black pepper
- 4 boneless and skinless chicken breasts
Instructions
- In a large Zipl0c plastic bag, mix drained pineapple juice, br0wn sugar, s0y sauce, garlic powder, ginger powder, and black pepper. Smush the bag with your hands to dissolve the sugar. Reserve 1/2 c. Marinade. Reserve the pineapple rings.
- Place the chicken breasts in the marinade. Take the air out of the bag, close it and place it in the refrigerator overnight.
- Preheat the grill to 350 degrees. Rub the grates with oil or preheat the grill on the oven over medium-high heat.
- Remove the chicken breasts from the marinade. Shake the excess. Place on the grill and grill 5-8 minutes per side or in a baking dish. Brush with reserved marinade several times during cooking.
- While the chicken is grilling, place pineapple rings on the grill and cook until hot. The slices have traces of grill then remove them from the grill.
- Remove the chicken breasts from the grill when the internal temperature reaches 165 degrees. Garnish with pineapple slices and serve.
